Pour the olive oil into a small ramekin, then add the minced garlic and mix.
Spread the garlic and olive oil mixture evenly over both flatbreads.
Season with a bit of sea salt and freshly cracked pepper to taste.
Layer with the mozzarella slices, then add the tomato slices on top.
Place the flatbread pizza into the oven and bake for 7-8 minutes, or until golden brown.
Remove from the oven and top with fresh basil, a drizzle of balsamic glaze, and slice.
Serve with grated parmesan on the side. Enjoy.Side Note: If you don't have a balsamic glaze, you can make it by reducing balsamic vinegar in a saucepan over medium heat. It's sweet and delicious!
