Ingredients
White Balsamic Vinaigrette:
2tbspcanola oil
2tbspolive oil
4tbspwhite balsamic vinegar
½tspof sugar
1cloveof garlicminced finely
Sea salt and freshly cracked pepperto taste
Pasta Salad:
8ozgemelli pastacooked per instructions
A handful of grape tomatoes
Mozzarella cheesediced into small cubes
Fresh basilchiffonade
Instructions
Make the vinaigrette by whisking all the ingredients in a small glass jar, until well combined. Side Note: We like a tangy vinaigrette, if you don't use less vinegar.
Cook the pasta in a large pot of well-salted water, per instructions; drain and place in a bowl.
Immediately dress the hot pasta by pouring some of the well-whisked vinaigrette on the pasta and stir to combine; set aside to cool completely and allow flavors to soak into the pasta.
Finish the salad once the pasta has cooled completely, add the grape tomatoes, mozzarella cheese cubes, fresh basil, and more of the well-whisked vinaigrette, to taste; toss to coat evenly. Serve and enjoy!
