Caprese Pasta Salad with a White Balsamic Vinaigrette

This recipe was inspired by my oldest sister Dana, who called me recently and suggested I make caprese salad combined with pasta, and since I am a dutiful younger sister I complied and made this easy caprese pasta salad with a white balsamic vinaigrette recipe. We loved the combination of fresh basil, creamy cheese, sweet tomatoes, soft pasta, and tangy vinaigrette. My whole family enjoyed this dish, especially my son who had 3 servings. This caprese pasta salad paired well with Basil Marinated Chicken Thighs. Thanks for the inspiration, Dana!

Caprese Pasta Salad with a White Balsamic Vinaigrette:

White Balsamic Vinaigrette:

  • 2 tbsp canola oil
  • 2 tbsp olive oil
  • 4 tbsp white balsamic vinegar
  • 1/2 tsp of sugar
  • 1 clove of garlic, minced finely
  • Sea salt and freshly cracked pepper, to taste

Pasta Salad:

  • 8 oz gemelli pasta, cooked per instructions
  • A handful of grape tomatoes
  • Mozzarella cheese, diced into small cubes
  • Fresh basil, chiffonade

How to Make a Caprese Pasta Salad with a White Balsamic Vinaigrette:

Make the vinaigrette by whisking all the ingredients in a small glass jar, until well combined. Side Note: We like a tangy vinaigrette, if you don’t use less vinegar.

Cook the pasta in a large pot of well-salted water, per instructions; drain and place in a bowl.

Immediately dress the hot pasta by pouring some of the well-whisked vinaigrette on the pasta and stir to combine; set aside to cool completely and allow flavors to soak into the pasta.

Finish the salad once the pasta has cooled completely, add the grape tomatoes, mozzarella cheese cubes, fresh basil, and more of the well-whisked vinaigrette, to taste; toss to coat evenly.  Serve and enjoy!

White Balsamic Vinaigrette:

  1. I’m very sad this entry has no comments, so I MUST leave one! I LOVE this recipe. I’ve made it at least half a dozen times and everyone always loves it. It’s so easy and fresh and light. I just looked it up again to make it for a baby shower tomorrow.

    I didn’t even know white balsamic existed until I make this a year and a half ago. Now I use it all the time.
