2bonelessskinless chicken breasts, cut into bite-sized pieces
¼cupof dried orzocooked per instructions, reserving ½ cup of cooking liquid
2-3tspchicken bouillon granulesto taste
½cupParmesan cheesegrated
¼cupfresh parsleychopped
Instructions
Heat oil or butter in a large skillet over medium-high heat. Add chopped mushrooms, onion, and thyme and cook, stirring often, for 5 minutes, or until the onion is tender.
Add the chicken, sea salt, and freshly cracked pepper to taste then cook, stirring often, for 7-8 minutes or until the chicken is golden brown and cooked through; add the minced garlic and cook, stirring constantly, for 1 minute.
Meanwhile, cook the orzo in a large saucepan in well-salted water, according to the package instructions. Drain, reserving ½ cup of cooking liquid.
Remove skillet from the heat then add the cooked orzo, bouillon granules, Parmesan, and parsley to the chicken mixture, and a bit of cooking liquid as needed; toss to mix thoroughly. Taste and re-season with salt and pepper if needed. Serve and enjoy.
