Ingredients
Spicy Lime Vinaigrette:
¼cupof lime juice
¼cupof seasoned rice vinegar
3-4tbspsugarto taste
3tbspfish sauce
5-6clovesof garlicminced
1tspcrushed red pepper flakes(1 tbsp if you want it spicy)
Sea saltto taste
Salad:
4ozof rice noodlesprepared per instructions
4cupsof spring mix salad greens
1½cupsof roasted chickenshredded (you can use rotisserie chicken)
1cucumberseeded and thinly sliced
½cupof carrotsshredded
½cupof toasted peanuts
¼cupfresh cilantrochopped
¼cupof green onionschopped
¼cupof red onionthinly sliced
Instructions
Make the vinaigrette by combining the lime juice, seasoned rice vinegar, sugar, fish sauce, garlic, crushed red pepper flakes, and sea salt, to taste, in a small glass jar. Seal with a lid, shake well, and set aside to allow the flavors time to mingle.
Prepare the rice noodles according to the package instructions. Once they are cooked, rinse with cold water and drain well.
Prepare the salad by combining the rice noodles with the salad greens, chicken, cucumber, carrots, peanuts, cilantro, green onions, red onion, and vinaigrette. Toss until evenly coated.
