Ingredients

lb
shrimp, shelled & deveined, (I used extra-large 26/30 )

olive oil
Sea salt and freshly cracked pepper, to taste
Fresh red crushed pepper, to taste

tbsp
salted butter
2
cloves of garlic, minced
1
tbsp
fresh parsley, chopped
Instructions
Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
Peel and de-vein the shrimp, making sure to leave the tails on.
Drizzle the shrimp with olive oil then season both sides with sea salt, freshly cracked pepper, and crushed red pepper flakes, to taste.
Place into the oven and roast for 4 minutes. Remove from the oven.
Combine the melted butter with the minced garlic; mix until well combined.
Drizzle the melted garlic butter over the shrimp then toss to coat evenly.
Place back into the oven to roast for 4-5 minutes, or until pink and cooked through.
Remove from the oven and sprinkle the top with freshly grated parmesan.
Serve immediately with lemon wedges (and cocktail sauce), if desired. Enjoy!
