Coat a baking sheet with cooking spray, then add the baby red potatoes.
Drizzle the potatoes with olive oil, then season with sea salt and freshly cracked pepper, to taste.
Place them into the oven to roast for 15 minutes, then toss them.
Continue roasting 10-15 minutes, or until tender and cooked through.
Remove the roasted potatoes from the oven and drizzle with more olive oil, freshly chopped parsley, and minced garlic; toss until evenly coated, then place back into the oven for 2-3 minutes.
Remove from the oven and serve immediately. Enjoy.
