Ingredients

olive oil

of baby potatoes

fresh thyme leaves
Sea salt and freshly cracked pepper
to taste
Pinch
of crushed red pepper flakes
to taste

butter

cloves
of garlic
minced
Zest from one lemon

tbsp
fresh parsley
finely chopped
Instructions
Preheat the oven to 450 degrees. Coat a large baking dish with olive oil cooking spray.
Place the potatoes in the prepared baking dish and toss them with olive oil, thyme, sea salt, and freshly cracked pepper, to taste until well coated.
Place into the oven and roast for 35-40 minutes or until fork-tender inside and crispy outside.
While the potatoes are roasting, combine the melted butter, minced garlic, lemon zest, and parsley.
Once the potatoes are fork-tender, remove them from the oven and drizzle with the garlic butter; toss to coat evenly.
Return to the oven for 2-3 minutes.
Remove and serve immediately. Enjoy.
