Large Dutch oven
Ingredients
1tbsptoasted sesame oil
4clovesof garlic
1tbspof fresh gingerminced
4ozshiitake mushroom capsstems removed, sliced
½cupcarrotsshredded
8cupsvegetable or chicken broth
2tbspsoy sauceor more to taste
36 ozpackages of yaki-soba noodles
2cupsbaby spinach
1hard boiled (or soft boiled) egg half per bowlif desired
Instructions
Make hard-boiled eggs, if desired.
Heat 1 tablespoon sesame oil in a large Dutch oven over medium heat. Add garlic and ginger along with the carrots and mushrooms, and cook, stirring frequently, until fragrant, about 1-2 minutes.
Whisk in broth and soy sauce. Bring to a boil; reduce heat and simmer until mushrooms have softened, about 10 minutes.
Stir in Yaki-Soba until loosened and cooked through, about 2-3 minutes.
Stir in spinach and cook until it begins to wilt, about 2 minutes.
