Preheat the oven to 400 degrees. Coat a baking dish with olive oil cooking spray.
Place the potatoes in the baking dish and drizzle with olive oil, season with sea salt, freshly cracked pepper, and garlic powder to taste, then toss to coat evenly.
Place into the oven and roast for 20-25 minutes, or until fork-tender.
Remove from the oven and cool for a few minutes.
Slit across the top, then gently pinch each end of the potato towards the middle.
Spoon a bit of butter, sour cream, and a sprinkling of chives. Serve immediately. Enjoy.
