Ingredients
White Balsamic Vinaigrette:
2tbspcanola oil
1tbspolive oil
2tbspwhite balsamic vinegar
½tspof sugar
Sea salt and freshly cracked pepperto taste
Salad:
4cupsof mixed greens
Several Rainier cherriessliced (pits & stems removed)
1ripe nectarinesliced
2tbsppomegranate seeds
2tbspfeta cheese
Instructions
Make the vinaigrette, by combining the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt, and freshly cracked pepper, to taste together in a small bowl. Whisk until well combined. Set aside.
Make the salad by combining the mixed greens with sliced cherries, nectarines, pomegranate seeds, and feta cheese.
Drizzle the salad with the well-whisked balsamic vinaigrette, to taste, and toss until well combined. Serve immediately. Enjoy.
