Pat the pork chops dry, then season each side with sea salt and freshly cracked pepper to taste.
Heat the oil in a large cast iron skillet over medium-high heat until HOT.
Dredge both sides of the pork chops well in the seasoned flour, then gently place them into the HOT skillet.
Cook undisturbed for 4-5 minutes, then flip over and cook for an additional 3-4 minutes, or until cooked through and golden brown.
