Make the sauce by combining combining cornstarch and soy sauce in a small saucepan over medium-high heat; mix until it's smooth. Add honey, garlic, ginger and water then bring to a boil while stirring. Reduce heat and let thicken.
Season the pork chops with sea salt, black pepper, and garlic powder, to taste.
Cook the pork by heating the olive oil in a large skillet over medium-high heat, once HOT, add pork chops & cook for 2-3 minutes per side.
Pour sauce over the pork chops then toss to coat in the sauce.
Place the pork on a serving plate along with sauce and garnish with sliced green onion. Serve immediately and enjoy.
