Ingredients
Cookie Ingredients:

of canned pumpkin puree

Cinnamon Icing:

cinnamon

vanilla extract

of powdered sugar

melted butter
Instructions
Preheat the oven to 350 degrees. Line a baking sheet with a Silpat mat or parchment paper.
Prepare the cookies
by combining the flour, baking powder, baking soda, and salt in a bowl. Mix well.
In another bowl, beat the pumpkin pie spice, butter, and sugar together with a hand mixer (or stand mixer) until creamy.
Add the pumpkin puree, egg, and vanilla extract and mix until well combined. Slowly add the flour mixture to the pumpkin mixture until just combined.
Drop by the spoonful onto the baking sheet; flatten slightly.
Bake the cookies
by placing them in the oven and baking for 13-15 minutes.
Cool on a wire cooling rack.
Prepare the cinnamon icing
by mixing all of the ingredients in a bowl until smooth.
Place the cookies on a wire rack over waxed paper.
Spoon the icing
over each cookie and spread it evenly. Serve with an ice-cold glass of milk. Enjoy!
