Ingredients
1tbspbutter or olive oil
½red oniondiced
3small baby bell peppersdiced
2clovesof garlicminced
1cupof dried quinoa
Fresh parsleychopped
Instructions
Heat the butter or olive oil in a large skillet over medium heat. Add the onion and bell peppers, and cook for 10-12 minutes, stirring often, or until the veggies are tender and golden brown.
Once the peppers and onions are tender and golden brown, add the minced garlic and stir constantly for 60 seconds; remove veggies from heat and season with sea salt and freshly cracked pepper to taste.
Meanwhile, prepare the quinoa in a small saucepan according to the package instructions.
Finish the dish by combining the cooked quinoa with the caramelized vegetables, and mix thoroughly. Season with sea salt and freshly cracked pepper to taste.
