1cuproasted sweet potatoes and vegetablesClick link up above for the recipe
½cupcooked brown rice
¼cupcooked black beans
1tspolive oil
1cupkalechopped
Pinchof crushed red pepper flakes
Sea salt and freshly cracked pepperto taste
Hot sauceif desired
Instructions
Prepare the brown rice in a small saucepan, per instructions.
Heat the olive oil in a large skillet over medium heat. Add the kale, crushed red pepper flakes, sea salt & freshly cracked pepper, to taste. Cook, stirring often, until wilted, about 3-4 minutes.
Heat the drained & rinsed black beans until warm.
Spoon the rice into a serving bowl along with some sliced chicken, roasted sweet potatoes & vegetables, black beans, and sautéed kale. Serve with your favorite hot sauce & enjoy.
