Ingredients
Roasted Zucchini:

olive oil

large or 2 small zucchini
halved lengthwise then cut into same-sized pieces

garlic powder
¼

crushed red pepper flakes
Sea salt and freshly cracked pepper
to taste
Serving:
Juice from 1/2 lemon juice
or more to taste

feta cheese
crumbled, or more to taste

parmesan cheese
freshly grated, or more to taste
½
tbsp
fresh parsley
chopped, or more to taste
½
tbsp
fresh basil
chopped, or more to taste
Instructions
Preheat the oven to 425 degrees.
Toss the zucchini with olive oil, garlic powder, crushed red pepper flakes, sea salt, and freshly cracked pepper, to taste, until evenly coated.
Pour the zucchini onto a baking sheet in a single layer and spread apart.
Place into the oven to roast for 5-7 minutes, or until the zucchini is crisp-tender.
Side Note: Cook longer if you like very soft and tender zucchini.
Remove from the oven and place on a serving plate.
Top with fresh lemon juice, feta cheese, parmesan, parsley, and basil. Serve immediately. Enjoy.
