Roasted Zucchini
A simple and easy side dish, this roasted zucchini is topped with fresh herbs, feta cheese, and lemon juice.
I made this easy roasted zucchini recipe to pair with creamy Tuscan chicken (Marry Me Chicken), garlic roasted tomatoes, and mashed potatoes. The roasted zucchini was easy to make and tasted fantastic topped with creamy cheese, fresh herbs, and lemon juice.
Roasted Zucchini
Ingredients:
- 1 tbsp olive oil
- 1 large or 2 small zucchini, halved lengthwise then cut into same-sized pieces
- 1/4 tsp garlic powder
- 1/4 tsp crushed red pepper flakes
- Sea salt and freshly cracked pepper, to taste
Serving:
- Juice from 1/2 lemon juice, or more to taste
- 1 tbsp feta cheese, crumbled, or more to taste
- 1 tbsp parmesan cheese, freshly grated, or more to taste
- 1/2 tbsp fresh parsley, chopped, or more to taste
- 1/2 tbsp fresh basil, chopped, or more to taste
How to Make Roasted Zucchini
Preheat the oven to 425 degrees.
Toss the zucchini with olive oil, garlic powder, crushed red pepper flakes, sea salt, and freshly cracked pepper, to taste, until evenly coated.
Pour the zucchini onto a baking sheet in a single layer and spread apart.
Place into the oven to roast for 5-7 minutes, or until the zucchini is crisp-tender. Side Note: Cook longer if you like very soft and tender zucchini.
Remove from the oven and place on a serving plate. Top with fresh lemon juice, feta cheese, parmesan, parsley, and basil. Serve immediately. Enjoy.
