Garlic Roasted Tomatoes
These healthy & delicious garlic roasted tomatoes are sweet, juicy, and bursting with a ton of flavor.
I’ve always enjoyed roasting tomatoes because it brings out their sweetness. My whole family loves this easy recipe for garlic roasted tomatoes and I make them at least once a week. What makes these tomatoes extra special is that I slide thinly sliced garlic slivers inside each tomato before the roast so they are infused with garlic flavor. I serve these tasty garlic roasted tomatoes as a side dish, on top of pasta, or on crostini slathered with Boursin cheese.
Garlic Roasted Tomatoes
Ingredients:
- 2 tbsp olive oil, more if needed
- 6-7 Campari tomatoes, halved (*other small tomatoes will work but may need a longer roasting time)
- 2-3 cloves of garlic, thinly sliced
- Sea salt and freshly cracked pepper, to taste
- Garlic powder, to taste
- Crushed red pepper flakes, to taste
- Fresh parsley, finely chopped
How to Make Garlic Roasted Tomatoes
Preheat the oven to 400 degrees. Coat a small baking dish with 1 tablespoon of olive oil.
Place the tomato halves, cut side up, in the prepared baking dish. Slide a few garlic slivers into the top of each tomato half.
Drizzle the remaining tablespoon of olive oil over the tomato halves then season them with sea salt, freshly cracked pepper, garlic powder, and crushed red pepper flakes, to taste.
Place into the oven and roast for 30-35 minutes, or until tender and juicy.
Remove from the oven and top with chopped parsley. Enjoy.

A simple and very tasty side!
I’ve never had roasted tomatoes as a side dish but these look very good and make me want to try them. It wont be long before we’ll have tomatoes good enough.
These would be great to have to add to other dishes as well.
