Roasted Tomato and Boursin Crostini
Crispy crostini, slathered with creamy Boursin cheese, topped with jammy roasted tomatoes, and fresh herbs. These roasted tomato and Boursin crostini are easy to make and so addictive!
I love this easy roasted tomato and boursin crostini recipe so much, that I’ve made them twice in three days. What’s not to love about crispy baguette slices topped with Boursin garlic & herb cheese and garlic-infused roasted tomatoes? These little beauties are also really delicious with toasted pine nuts on top.
Roasted Tomato and Boursin Crostini
Ingredients:
- 4-5 Campari tomatoes, halved
- 2 small garlic cloves, sliced into slivers
- 2 tbsp olive oil
- Crushed red pepper flakes, to taste
- Sea salt and freshly cracked pepper, to taste
- 1/2 baguette, sliced thinly
- Boursin garlic and herb cheese
Serving:
- Fresh parsley, finely chopped
- Fresh basil, finely chopped
- Toasted pine nuts, optional
How to Make Roasted Tomato and Boursin Crostini
Preheat the oven to 375 degrees.
Place the tomato halves in a small baking dish. Press the garlic slivers into all of the tomato halves.
Drizzle the top of the tomatoes evenly with olive oil then season with crushed red pepper flakes.
Place into the oven to roast for 20-25 minutes, or until softened and jammy. Remove from the oven and set aside to cool. Side Note: Keep the oven on.
Meanwhile, brush the baguette slices with olive oil (optional) then put them on a baking sheet.
Place into the oven to bake for 3-5 minutes, or until toasted. Flip over and continue to bake for another 2-3 minutes, or until toasted and crisp. Remove from the oven and set aside to cool.
To serve, slather each crostini with Boursin cheese then top them with one roasted tomato half. Finish with a sprinkling of fresh parsley and basil. Serve and enjoy. Side Note: If you want them extra fancy, top with a few toasted pine nuts.
