Prepare the hard-boiled eggs. Click the link above for instructions.
Prepare the egg salad by peeling the cooled eggs and placing them in a shallow bowl.
Using a fork, mash the eggs into coarse chunks.
Add the mayonnaise, cilantro, green onion, mustard, garlic, sea salt, freshly cracked black pepper, and paprika. Mix well. Taste and re-season if needed.
Prepare the sandwich by spreading the egg salad over one slice of bread. Top with the remaining slice and serve. Enjoy.
