Cook the bacon bits in a large skillet over medium heat until golden brown.
Remove bacon from the skillet and place it on paper towels to drain the grease. Discard the bacon grease from the skillet.
Melt the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.
Next, add the remaining butter, skillet gnocchi, and tomatoes, then cook, stirring occasionally, for 4 minutes.
Finally, add the baby spinach, minced garlic, and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.
Season with sea salt and freshly cracked pepper, to taste.
Serve immediately, along with Parmesan cheese on the side. Enjoy.
