Skillet Gnocchi with Bacon, Tomatoes, and Spinach

This skillet gnocchi with bacon, tomatoes, and spinach recipe was a quick and easy meal I threw together in minutes, using stuff I had in the fridge. I love those kinds of recipes! This easy gnocchi recipe took less than 30 minutes to make, and we all thought it was delicious paired with a simple salad and some focaccia bread.

Skillet Gnocchi with Bacon, Tomatoes, and Spinach

Ingredients:

  • 2 pieces of bacon, cut into small pieces
  • 1 tbsp butter, divided
  • ¼ small yellow onion, sliced
  • 1 (12 oz) bag of skillet gnocchi
  • 1 handful of grape tomatoes
  • 1½ cups baby spinach
  • 2 cloves of garlic, minced
  • Pinch of crushed red pepper flakes
  • Sea salt and freshly cracked pepper, to taste
  • Fresh parmesan, grated

How to Make Skillet Gnocchi with Bacon, Tomatoes, and Spinach

Cook the bacon bits in a skillet over medium heat until golden brown.

Remove bacon from the skillet and place it on paper towels to drain the grease. Discard the bacon grease from the skillet.

Melt the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.

Next, add the remaining butter, skillet gnocchi, and tomatoes, then cook, stirring occasionally, for 4 minutes.

Finally, add the baby spinach, minced garlic, and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.

Season with sea salt and freshly cracked pepper, to taste.

Serve immediately, along with Parmesan cheese on the side. Enjoy.

  1. This sounds fantastic but it would not be so quick for me as I suspect I would have to make the gnocchi. I do not remember ever seeing it for sale here. Keep well ,Diane

  2. I would like to know what “skillet gnocchi” is? Is it the same as frozen because that is all I see in our stores.

      In my local Safeway, it is in a refrigerated section with the fresh pasta near the deli counter. I hope this helps!

    Hi Pam,
    Our neighbor just passed on 4 pounds of bacon that they for a big brunch that didn’t happen.
    So I find myself with lots of bacon to use and I googled bacon on this site and I’m pretty much cooking through the recipes. Never have I had the indulgence of lots of bacon to use. I froze half of it, but i’m using this excuse to have the pleasure of adding bacon to everything we’re eating. Yes, it is fattening but a lot of your recipes don’t use a huge amount which makes it OK in my book.
    This recipe with the tomatoes and gnocchi and spinach is an unusual surprise to add to a dinner and is a delight!
    So delicious. Thank you again for yet another keeper.
