Skillet Gnocchi with Bacon, Tomatoes, and Spinach
This skillet gnocchi with bacon, tomatoes, and spinach was a quick and easy lunch I threw together in minutes and it used up bits and pieces I found in the refrigerator. I love those kinds of recipes! I sauteed the onions, gnocchi, tomatoes, spinach, and garlic in the butter then topped the dish with the crumbled bacon. This dish took less than 30 minutes to make and both of my kids loved it.
How to Make Skillet Gnocchi with Bacon, Tomatoes, and Spinach
Cook the bacon bits in a skillet over medium heat until golden brown; remove from the skillet and place on a paper towel to drain the grease. Discard the bacon grease from the skillet.
Melt the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes. Next, add the remaining butter, skillet gnocchi, and tomatoes then cook, stirring occasionally for 4 minutes.
Finally, add the baby spinach, minced garlic, and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted. Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.

A very satisfying and delicious meal!
This sounds fantastic but it would not be so quick for me as I suspect I would have to make the gnocchi. I do not remember ever seeing it for sale here. Keep well ,Diane
We enjoy the skillet gnocchi and this looks like another good dish from it.
What a neat idea! Terrific and flavorful meal that’s done in a jiffy. What’s not to like? 🙂 Really good stuff — thanks.
What a delicious way to serve gnocchi.
I would like to know what “skillet gnocchi” is? Is it the same as frozen because that is all I see in our stores.
Caroline,
In my local Safeway, it is in a refrigerated section with the fresh pasta near the deli counter. I hope this helps!

Hi Pam,
Our neighbor just passed on 4 pounds of bacon that they for a big brunch that didn’t happen.
So I find myself with lots of bacon to use and I googled bacon on this site and I’m pretty much cooking through the recipes. Never have I had the indulgence of lots of bacon to use. I froze half of it, but i’m using this excuse to have the pleasure of adding bacon to everything we’re eating. Yes, it is fattening but a lot of your recipes don’t use a huge amount which makes it OK in my book.
This recipe with the tomatoes and gnocchi and spinach is an unusual surprise to add to a dinner and is a delight!
So delicious. Thank you again for yet another keeper.
Anne,
I love this recipe too and I’m so glad you enjoyed it. Thanks for taking the time to let me know.
