Simple Butter Lettuce Salad
This simple butter lettuce salad with honey mustard vinaigrette is layered with avocado & radish slices and topped with homemade cheesy breadcrumbs.
Simple. Delicious. Addictive. Three words I’d use to describe this tasty salad that I recently found on a recipe for on With Spice. I adapted the recipe by halving the salad portion but kept the vinaigrette portion the same so I would have leftovers. I also added some garlic to the vinaigrette because I love garlic and I used panko crumbs instead of sourdough bread crumbs because it’s what I had on hand. The homemade cheesy breadcrumbs are very addictive and I couldn’t stop eating them. This simple butter lettuce salad paired nicely with chicken Francese and sauteed spinach.
How to Make a Simple Butter Lettuce Salad
Make the honey mustard vinaigrette by combining olive oil, white wine vinegar, honey mustard, shallot, garlic, parsley, honey, sea salt, and freshly cracked black pepper, to taste, together in a small glass jar. Seal with a lid and shake very well until emulsified. Set aside to allow flavors time to mingle. Shake well right before using.
Make the cheesy breadcrumbs by heating the olive oil in a small skillet over medium-high heat. Add the panko crumbs and season with garlic powder, sea salt, and freshly cracked pepper, to taste and cook, stirring often, for 4-5 minutes, or until toasted and lightly golden brown.
Reduce the heat to medium-low and add the finely grated parmesan cheese and cook, stirring often, for 2-3 minutes or until melted into the bread crumbs. Taste the crumbs and re-season, if needed. Set aside to cool completely.
Make the simple butter lettuce salad by tearing the butter lettuce into pieces and placing it in a bowl. Drizzle with some of the honey mustard vinaigrette, to taste, and toss to coat evenly. Place the dressed butter lettuce on a serving plate, if desired.
Top the butter lettuce with avocado and radish slices. Sprinkle the cheesy bread crumbs over the top along with snipped chives then season with freshly cracked black pepper, to taste. Serve immediately with additional honey mustard vinaigrette on the side. Enjoy.

- ⅓ cup olive oil
- 3-4 tbsp white wine vinegar, to taste
- 1 tbsp honey mustard
- 1 tbsp shallot, minced
- 1 tsp garlic, minced
