Thai Cucumber Salad with Peanuts

Ingredients

fresh lime juice

fish sauce

sugar

Thai chili
sliced thinly

of garlic
minced

canola oil

English cucumber
halved lengthwise, seeded and sliced 1/4 inch thick
¼
small red onion
sliced thinly
⅓
cup
fresh cilantro
chopped
2-3
tbsp
roasted peanuts
Pinch
of sea salt
Instructions
Combine the lime juice, fish sauce, sugar, chilies, garlic, and oil in a small bowl. Whisk until well combined; set aside to allow flavors to mingle.
When ready to serve the salad, add the cucumber, sliced onion, cilantro, peanuts, and a pinch of salt to a large bowl.
Whisk the dressing well before pouring it on top of the cucumber mixture.
Mix with a spoon until well combined. Serve immediately. Enjoy.
