Thai Cucumber Salad with Peanuts
I was making a red curry dish for dinner tonight and wanted to pair it with a light side dish. I found this recipe at Food and Wine and thought it would be perfect, especially since I had all of the ingredients on hand. I love it when that happens! This cucumber salad was super easy to throw together, tasted fresh, crisp, and delicious. I loved the combination of flavors and textures, the bit of heat the Thai chile gave to the dressing, and the salty crunch the peanuts gave to the salad.
How to Make a Thai Cucumber Salad with Peanuts
Combine the lime juice, fish sauce, sugar, chiles, garlic, and oil together in a small bowl. Whisk until well combined; set aside to allow flavors to mingle.
When ready to serve the salad, add the cucumber, sliced onion, cilantro, peanuts, and a pinch of salt to a large bowl. Whisk the dressing well before pouring it on top of the cucumber mixture. Mix with a spoon until well combined. Serve immediately. Enjoy.
This is a great idea for a lighter salad to serve on the side of a heavy-ish dish. Looks so pretty, too!

Thai restaurants never give you a real portion of this! Just a teaser, like one little crescent of cucumber. I really should try your recipe. I usually have most of the ingredients on hand as you did, except, in my case, the peanuts. I rarely have any peanuts. You would think fish sauce would be the odd one out, but no.
