Oatmeal, Chocolate Chip, Craisin and Pecan Cookies
My husband and I were going out to a movie and dinner with friends and I wanted to bring a special treat to my girlfriend’s mother who was babysitting all of our kids. I decided to make some tasty oatmeal, chocolate chip, craisin, and pecan cookies. They were a huge hit with everyone and they were so easy to make.
Oatmeal, Chocolate Chip, Craisin, and Pecan Cookies:
Ingredients:
- 1/2 cup of unsalted butter, softened
- 1/4 cup white sugar
- 1/2 cup of brown sugar
- 1 egg
- 1 tsp vanilla
- 1/2 cup PLUS 2 tbsp flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 1/2 cups of quick-cooking oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup of craisins
- 1/4 cup pecans, chopped
How to Make Oatmeal, Chocolate Chip, Craisin, and Pecan Cookies
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Using a hand mixer or stand mixer, beat the butter, white sugar, and brown sugar until creamy.
Mixing slowly, add the egg and the vanilla.
In a separate bowl combine the flour, salt, and baking soda; slowly stir the flour mixture into the creamed mixture until blended.
Add the oats, chocolate chips, craisins, and pecans then mix thoroughly.
Drop spoonfuls onto the baking sheet.
Place the baking sheet into the oven and bake for 10-13 minutes. Let the cookies cool on a wire rack. Enjoy.
