Cowboy Cookies

My son wasn’t feeling well recently so we decided to make cookies together because surely they would make him feel better (they did). While we were preparing the ingredients for these cookies my son said that he thought we should also add white chocolate chips to the mix… I love that he is already adapting recipes to suit his 5-year-old tastes. These cowboy cookies turned out to be one of my very favorite cookies – EVER. I loved the combination of ingredients and how soft and chewy the cookies were. My son loved them and said they really made him feel better and my daughter was thrilled to come home from school to freshly baked cookies.

Cowboy Cookies:

Ingredients:

  • 1 cup of flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup of butter, softened
  • 1/4 cup + 2 tbsp brown sugar
  • 1/4 cup + 2 tbsp white sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 3/4 cup of oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup of sweetened shredded coconut
  • 1/4 cup pecans pieces

How to Make Cowboy Cookies

Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

Sift together the flour baking soda, salt, and baking powder until well mixed.

In a separate bowl, beat together the butter, brown sugar, and white sugar until creamy. Add the egg and vanilla then continue to beat until well combined.

Slowly add the flour mixture to the sugar mixture until mixed well. Add the oats, chocolate chips, white chocolate chips, coconut, and pecans. Mix until just combined.

Spoon the dough onto the silpat lined baking sheet about 2 inches apart. Place into the oven and bake for 10-12 minutes. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before moving them to a wire rack to continue cooling. Enjoy.

The Easter Bunny brought her some of her very own cooking tools! She loves to wear her apron but also insists that anyone else in the kitchen also wear one.
