S'mores Cookies

We were headed out of town for the weekend to camp at the Oregon coast in our motor home with friends.  The weather was going to be rainy and stormy the whole time which meant we wouldn’t be building fires to cook s’mores so I went in search of a good alternative.  I found these s’more cookies on Kevin & Amanda’s site that looked perfect.  I picked up the marshmallow bits at the store and baked these cookies right before we left town.  The dough was very crumbly when I made them and it made me worry that the cookies would be crumbly but they turned out to be thick, hearty, and absolutely delicious cookies.  They were a big hit with all the kids (and adults) all weekend long and nobody was too disappointed that we couldn’t make traditional s’mores over a campfire.

How to Make S’mores Cookies

Preheat the oven to 350 degrees.

Use a food processor to crush the graham crackers to fine crumbs.  Combine the flour, graham crackers, baking powder, and salt together in a bowl; mix well.

Beat the butter with the sugars until creamy and smooth.  Add the egg and vanilla and beat until well combined.  Slowly add the flour mixture to the butter mixture until just combined.  Add the marshmallow bits and chocolate chips and mix.

Place spoonfuls of cookie dough onto a baking sheet about 2 inches apart.  Place into the oven and bake for 10-12 minutes or until golden brown.  Let the cookies cool for a couple of minutes before moving them to a cooling rack.  Enjoy dipped in ice-cold milk.

  • 1 cup semi-sweet chocolate chips
  • 1 cup Jet-Puffed Mallow Bits

  1. Those are making me drool, camping or no camping! Did you use just regular miniature marshmallows or are the mallow bits something different? I can’t always keep up with all the new products!

      They are dried marshmallow bits. They gave a great marshmallow flavor and a nice texture to the cookie without a big gooey mess. Not that a gooey mess is a bad thing. 🙂

    2. I use regular mini marshmallows (not the dehydrated ones) and they melt into this wonderful carmelized mess. Really I think they’re the best part. And to avoid an enormous mess on your cookie sheet just put down some parchment paper! So easy!! But I might have to try the dehydrated marshmallows once, see if they give it a different taste 🙂

  2. YUM! I think these are perfect for camping or any day of the year! Pam- I really admire that you and your family went camping dispite the storms and rain predicted. I think I would have rescheduled the trip and stayed home curled up by the fire with a good book! 😉

  4. I am so jealous that you can get the mallow bits at your local grocery store! I have been looking for months for them, and I have not seen them yet. I may give in and order them from amazon.

  5. I love all your recipes ‘chef’, but unfortunaltely the ingredients you use are the most of the time unavailable in my country. what can I substitute for Mallow bits plz? thanks in advance.

      I am sure mini marshmallows would work but be care of using too much so the cookies don’t get really gooey when the marshmallows melt. I hope this helps.

  6. I’m planning to make these for the first time and will be bringing them to a Christmas cookie exchange (not terribly Christmasy, but I’ve been waiting for a good excuse to make these!) Do you remember about how many cookies the recipe yields? 3 dozen maybe? 4? Thanks!

      I hope you love them as much as my kids did! It only made 18-20 cookies so you may want to double the recipe.

    2. For anyone’s future reference… I tripled the recipe and got almost 10 dozen 1 1/2 to 2 inch cookies. Sooo one batch would make about 3 dozen of my little cookies, and 18-20 sounds about right if you made nice big ones 🙂 I probably didn’t use quite enough graham cracker so the flavor got a little lost after baking, but they were still good! I’ve seen the mallow bits at Target and Walmart near the regular marshmallows.

  7. Finding Mallow Bits: I made these for a cookie exchange and they were delicious! For anyone looking for the mallow bits: I initially ordered them on Amazon (gasp!) because I could not find them at my local supermarkets. I then read somewhere that they sold them at my local Target! I am sure I don’t have to tell you how much less expensive that was!
