Frozen Chocolate-Covered Banana Slices Topped with Coconut

These frozen chocolate-covered banana slices topped with coconut are a fun and tasty treat I made this afternoon with my kids. It was 100 degrees outside, so we stayed inside and made these delicious bite-sized desserts and some blueberry yogurt popsicles. These treats were quick and easy–the hardest part was waiting for them to freeze. These banana slices are to be eaten straight from the freezer because the banana gets mushy if thawed. Needless to say, these were a HUGE hit with both of my kids.

Frozen Chocolate-Covered Banana Slices Topped with Coconut

Ingredients:

  • 2 cups milk chocolate chips
  • 2 tablespoons coconut oil
  • Shredded sweetened coconut
  • 3 ripe bananas, peeled, cut into ½-inch-thick slices

How to Make Frozen Chocolate-Covered Banana Slices Topped with Coconut

Stir the chocolate and oil in a small heavy saucepan over low heat just until smooth. Let stand 10 minutes to cool.

Line a baking sheet with parchment paper.

Place the coconut in a separate shallow dish.

Using a fork, dip 1 banana slice in chocolate, coating completely.

Shake off excess chocolate.

Place on the lined baking sheet.

Repeat with the remaining bananas.

Sprinkle the top of each banana slice with shredded coconut.

Place into the freezer and freeze until firm, about 3-4 hours, then serve immediately.

Store the remaining banana slices in a freezer bag or sealed container. Enjoy.

  2. You hit right on a theme that I have had this month in my house—frozen/cold dessert treats. I made a recipe of chocolate covered cheesecake bites earlier in the month and last week I made chocolate truffles (made with three ingredients—chocolate, vanilla & avocado) that I stored in freezer. Now these will be a nice surprise for my husband who LOVES bananas–and right now I have three bananas sitting on the counter just waiting to be transformed into this dessert. 🙂
