Egg & Avocado Open Faced Sandwich
I wanted a healthy breakfast to start the day off right and to give me some extra energy for my workout at the gym so I made this egg & avocado open faced sandwich and it was SO DELICIOUS! It was filling without being heavy and the sandwich paired nicely with the fresh berries. This was a healthy and satisfying breakfast that I will probably have again tomorrow.

Hi Pam!
What a GREAT quick breakfast before a workout. Quick because I usually have hard boiled eggs in the fridge for Marion:) I may just give this a try although, I think I will omit the yolks and just go with the whites.
Thanks so much for sharing, Pam…
Egg + avo’s make the most delicious + filling combination ever! Great recipe.
Looks healthy and delicious from here. I believe you’ve got the hard boiled egg thing down pat.
This looks so healthy and delicious, Pam!
impressive hard-boiling, pam! i love avocado toast, but i’ve never had boiled egg on top. looks beautiful and no doubt tastes great!
Sounds really good!
I have something very similar myself several mornings a week, love the addition of the cayenne.
It’s impressive when the hardest part of a meal is making toast.
You turned those boiled eggs into a delicious sandwich.
You forgot the crumbled bacon sprinkled on top 🙂 🙂
Look really beautiful and delicious Pam!!
I love the idea of a sandwich with avocado and egg!
I LOVE eggs for breakfast and somehow I’ve never thought to just make up a big batch of hard-boiled eggs…genius.
