Roasted Brussels Sprouts with Bacon and Halloumi
As a family, we are trying to eat more brussels sprouts, even though they aren’t our favorite vegetable. I grew up on them being boiled, soggy, and somewhat bland so I never really wanted to try cooking with them as an adult. In the last several years I have had some really delicious brussels sprout recipes, which then made me want to cook them at home. I have found that my favorite cooking method for them is roasting. I’ve never tried Halloumi cheese but it has been on my “must try” list for sometime, so when I found this recipe on The Girl on Bloor, I knew I had to give it a try. It was a really easy recipe that took less than 30 minutes to make. The brussels sprouts were tender and caramelized and the bits of bacon and crisp halloumi cheese not only added great flavor but texture as well. This one is a keeper.
How to Make Roasted Brussels Sprouts with Bacon and Halloumi
Preheat oven to 400 degrees. Coat a baking sheet with olive oil cooking spray.
Cook the bacon in a large skillet over med heat until just done (it will continue to cook in the oven), about 3-4 min. Remove all but a teaspoon of the grease. Add the diced halloumi cheese and sauté for 2-3 minutes or just turning golden brown (it will continue to cook in the oven).
In a large bowl, toss the brussels sprouts with olive oil, minced garlic, sea salt, and freshly cracked pepper, to taste. Add the bacon and halloumi cheese. Spread the mixture on the prepared baking sheet, then place it into the oven.
Bake for 15-20 min, tossing halfway through. Remove from oven and serve immediately. Enjoy!

- ⅓ cup Halloumi cheese diced into bite-sized pieces
- 2 cups brussels sprouts halved
- 1 tbsp olive oil
- 1 clove of garlic minced
- Sea salt and freshly cracked pepper to taste

We love brussel sprouts but generally I only cook them for about 5 mins in boiling water. This sounds like a winner but not sure I get Halloumi cheese here I will have to find a substitute. Have a good weekend Diane
Bacon in sprouts always makes my menfolk happy! I usually add minced garlic, but cheese of some sort (I’ve never tried Halloumi) sounds like a great addition, too!
