Roasted Brussels Sprouts with Bacon and Halloumi

As a family, we are trying to eat more Brussels sprouts, even though they aren’t our favorite vegetable. I grew up with them boiled, soggy, and somewhat bland, so I never really wanted to eat them as an adult. In the last several years, I finally tried them roasted and loved them! I found this roasted Brussels sprouts with bacon and halloumi recipe on The Girl on Bloor, and I thought it would pair nicely with a slow-roasted beef, Duchess potatoes, and dinner rolls.
Roasted Brussels Sprouts with Bacon and Halloumi
Ingredients:
- 4 slices of bacon (mine was par-cooked)
- â…“ cup Halloumi cheese, diced into bite-sized pieces
- 2 cups Brussels sprouts, halved
- 1 tbsp olive oil
- 1 clove of garlic, minced
- Sea salt and freshly cracked pepper, to taste

How to Make Roasted Brussels Sprouts with Bacon and Halloumi:
Preheat oven to 400 degrees. Coat a baking sheet with olive oil cooking spray.
Cook the bacon in a large skillet over medium heat until just done (it will continue to cook in the oven), about 3-4 min. Remove all but 1 tablespoon of the bacon grease. Add the diced halloumi cheese and sauté for 2-3 minutes, or just until golden brown (it will continue to cook in the oven).
In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, sea salt, and freshly cracked pepper to taste.
Add the bacon and halloumi cheese. Spread the mixture in a single layer on the prepared baking sheet.

Bake for 15-20 min, tossing halfway through.
Remove from oven and serve immediately. Enjoy!

Definitely one of my favourite winter veggies and roasting has brought out the characteristic flavour of this wonderful treasure.
I mean, bacon and halloumi could turn anyone into a brussels sprouts lover, right?? These look great!!
We love brussel sprouts but generally I only cook them for about 5 mins in boiling water. This sounds like a winner but not sure I get Halloumi cheese here I will have to find a substitute. Have a good weekend Diane
Bacon in sprouts always makes my menfolk happy! I usually add minced garlic, but cheese of some sort (I’ve never tried Halloumi) sounds like a great addition, too!
