Fettuccine Alfredo

My son loves fettuccine alfredo but I’ve never tried making it before so I decided to give it a try from a recipe I found on America’s Test Kitchen. The sauce took only about 15 minutes to make and it was rich, creamy, and so decadent. I cooked some fettuccine in my new copper pastaiola set and it was perfectly cooked. I loved how durable and well made both the coppered pot and the steel strainer are, and I absolutely loved the convenience of the removable strainer. It was so much easier to deal with than trying to pour hot boiling water into a colander in my sink and made no mess. Not only is this pastailoa set incredibly well made and solid, but it is also absolutely stunning too. I love having beautiful quality pieces of cookware that will last forever and this pot is no exception.

How to Make Fettuccine Alfredo

Heat one cup of the heavy cream and butter in a heavy saucepan over medium-low heat until at a simmer. Simmer for 12-15 minutes, stirring often, until it has reduced to about 2/3 cup. Remove from the heat and add the remaining 1/2 cup heavy cream.

Stir to combine then season with a bit of sea salt and freshly cracked pepper, to taste along with a pinch of freshly grated nutmeg.

While the cream is reducing, heat water in the Lagostina Martellata Hammered Copper Pastaiola Set or large pot, until boiling. Season the water with sea salt then add the fettuccine; cook per instructions until just shy of al dente. Drain, reserving 1/4 cup of pasta water.

Meanwhile, return the cream mixture to a simmer over medium-high heat; reduce heat to low then add the drained pasta and the parmesan cheese.

Cook over low heat, tossing the pasta with tongs to combine until the cheese is melted, the sauce has coated the pasta, and the pasta is al dente, 1-2 minutes.

Stir in the reserved cooking water, if needed. Set aside to allow to thicken for 1-2 minutes. Toss again then serve in warmed bowls so the sauce stays nice and creamy. Season with a bit more freshly cracked black pepper. Enjoy.

    What a beautiful pot! Besides spaghetti I’d love to use it to make gumbo. It’s getting cold and that means gumbo weather here in Louisiana.

    I have so many Italian recipes that I love! At this moment in time I’m thinking the first Italian dish recipe I would make in the pot would be Spaghetti alla Carbonara!!

    That pot is gorgeous! I would use it to make bucatini with amatriciana sauce. It’s one of my favorite dishes I ate while living in Italy!

    One of my favorite pasta dishes is oven baked macaroni and cheese. I can’t resist that top layer of golden brown cheese. That is the first thing I would make.

  13. Rather than reduce the cream, I add a well whipped egg, heat the cream in the pasta pot while the fettucini drains, and then toss it all together. Either way, it’s delicious! You could just let me win the pot for my birthday….only kidding! Your alfredo sauce looks delicious, Pam!

    I posted a great recipe but I think it got rejected so I’m trying again. Angel hair pasta, spinach, portobello mushrooms, red onions, and cherub tomatoes will make a great meal for one. Especially in such an awesome pot!
