Mixed Greens with Strawberries, Goat Cheese, and Marcona Almonds
I made the mistake recently of trying Marcona almonds. Bad idea! They are the most amazing nut I’ve ever eaten. I love the flavor and saltiness and crave them often. The problem is, they aren’t that great for you and they are very expensive. I only buy little containers at a time and try to savor them slowly. I had a busy morning running around trying to make it to my son’s geography bee this morning and an appointment right after, so by the time I got home for lunch, I was starving. Thankfully, I had some balsamic vinaigrette in the refrigerator, so I threw together and made this beautiful and tasty mixed greens with strawberries, goat cheese, and Marcona almonds that seriously took minutes to make. The combination of flavors and textures was wonderful and this salad tasted amazing.
How to Make Mixed Greens with Strawberries, Goat Cheese, and Marcona Almonds
Prepare the balsamic vinaigrette, click here for the link.
Place the mixed greens in a large bowl then drizzle with balsamic vinaigrette, to taste. Toss to coat evenly. Place the mixed greens in a serving bowl and top with sliced strawberries, goat cheese crumbles, and Marcona almonds. Season with sea salt and freshly cracked pepper, to taste. Serve immediately. Enjoy.

I don’t think I have ever had Marcona almonds…gotta look out for some to try! The salad looks very fresh and tasty.
Marcona almonds are great. And this salad is such a great way to feature them! I’m starting to crave big salads again for dinner — a sure sign that spring is on the horizon!
