Pomegranate-Mustard Vinaigrette
I grabbed some different greens while at the farmer’s market this weekend so I decided to make a simple vinaigrette to toss them in. I recently bought some pomegranate vinegar because I thought it would make a terrific vinaigrette so I grabbed it and a few other ingredients to make this delicious pomegranate-mustard vinaigrette. I really loved the flavors and it tasted wonderful on the simple salad.
How to Make a Pomegranate-Mustard Vinaigrette
Combine the vegetable oil, pomegranate vinegar, olive oil, shallot, mustard, honey, and sea salt, and freshly cracked pepper, to taste. Whisk until well combined. Drizzle over mixed greens, to taste; toss to coat evenly. Enjoy.
Servings: 1 /2 cup +
Ingredients
- ¼ cup vegetable oil
- ¼ cup pomegranate vinegar
- 1 tbsp olive oil
- 1 tbsp shallot minced
- 1 ½ tsp Dijon mustard
- 1 tsp honey to taste
- Sea salt and freshly cracked pepper to taste

I’ve never seen pomegranate vinegar but I bet that sweet-tart flavor is amazing in a vinaigrette!
