Orange Vinaigrette
We have been eating a lot of salads with roasted beets lately and I have found that orange and beets go very well together which had me wanting to make an orange vinaigrette to pair with a kale and beet salad I was making for dinner (the recipe will post tomorrow). I made the vinaigrette two hours before I served it so the flavors had plenty of time to mingle. I loved the fresh flavor of the orange juice combined with the zing from the vinegar and lemon juice and the garlic and shallot it gave it a nice kick of flavor. The vinaigrette was so delicious and my entire family thought it was wonderful on the salad. I am looking forward to trying this orange vinaigrette out on other salads I’ve been wanting to try.
How to Make an Orange Vinaigrette
Combine the freshly squeezed orange juice, olive oil, vegetable oil, white balsamic vinegar, lemon juice, orange zest, Dijon mustard, agave, sea salt, and freshly cracked pepper, to taste, in a small bowl. Whisk until well combined. Cover and set aside for at least 30 minutes to allow flavors to mingle before whisking well & serving. Enjoy.
Side Note: My family enjoys a less oily vinaigrette. Feel free to use more oil, if desired.

- ⅓ cup freshly squeezed orange juice
- 2 tbsp olive oil
- 2 tbsp canola oil
- 2 tbsp white balsamic vinegar
- 1 tsp fresh lemon juice
- Zest from 1 orange
- ½ tsp Dijon mustard
- Agave or honey, to taste, if needed
- Sea salt and freshly cracked pepper to taste
