Granola Cups with Yogurt and Fresh Fruit
I saw a recipe for these granola cups with yogurt and fresh fruit on Tasty that looked like a healthy and delicious after-school snack for my kids. The oat cups had a nice banana flavor and they were a bit chewy which both of my kids enjoyed. I used vanilla Greek yogurt and some fresh berries & kiwi on top and my kids loved them. These little cups are very easy to make and they made my kids smile. Win/win.
How to Make Granola Cups with Yogurt and Fresh Fruit
Preheat the oven to 350 degrees. Coat 6 spots in a muffin tin very well with cooking spray.
In a medium bowl, mash the ripe banana very well. Add the honey, vanilla, cinnamon, and salt; mix well. Add the oats and stir until thoroughly combined.
Press 2 tablespoons of mix into the six spots of the prepared muffin tin. Gently push the mix evenly up the sides and in the bottom to form a cup.
Place into the oven and bake for 30 minutes. Remove from the oven and cool for 5 minutes before removing them from the pan and placing them on an iron rack to finish cooling completely.
Once the granola cups have cooled, add a spoonful of vanilla Greek yogurt to the center then top with fresh strawberries, blueberries, raspberries, and kiwi. Serve immediately. Enjoy.

- Vanilla Greek yogurt
- Strawberries, blueberries, raspberries and kiwi *Use whatever fruit you want and mini chocolate chips and coconut are tasty additions too.
