Maple-Glazed Delicata Squash

Delicata is a colorful winter squash with thin edible skin, and I use it in salads or as a side dish throughout the winter. I stumbled on this easy maple-glazed delicata squash recipe on Carlsbad Cravings, which looked delicious. This quick and easy delicata squash recipe was a snap to make and paired nicely with a loaded spinach salad, crispy pork medallions, and some buttery dinner rolls.
Maple-Glazed Delicata Squash
Ingredients:
- 1 delicata squash, halved lengthwise, de-seeded, and cut into ¾-inch half-moon pieces
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1½ tsp real maple syrup
- ½ tsp balsamic vinegar
- ¼ tsp cinnamon
- Pinch of garlic powder
- Pinch of paprika
- Pinch of dried thyme
- Dash of cayenne pepper
- Sea salt and freshly cracked black pepper, to taste

How to Make Maple-Glazed Delicata Squash:
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Prepare the delicata squash by cutting it in half lengthwise, removing and discarding the seeds, and slicing into ¾-inch half-moon pieces.
Combine the olive oil, brown sugar, maple syrup, balsamic vinegar, cinnamon, garlic powder, paprika, thyme, cayenne pepper, sea salt, and freshly cracked black pepper to taste in a large bowl. Mix until well-combined.
Add the sliced squash to the bowl and toss to coat each piece evenly.
Lay the delicata squash in an even layer on the prepared baking sheet, reserving the bowl with the excess glaze for brushing later.

Place into the oven to roast for 15 minutes.
Remove from the oven, and flip them over.
Brush the squash pieces with the leftover glaze and return to the oven for 15-20 minutes, or until golden brown and caramelized.
Remove from the oven and sprinkle with a bit of sea salt. Serve and enjoy.
