Simple Lemon Vinaigrette

This simple lemon vinaigrette is healthy and so delicious. It uses pantry items like fresh lemon juice, good olive oil, and minced garlic, and it brightens up almost any salad. My family really likes a tangy vinaigrette, so I add a lot of fresh lemon juice, but you can adjust the amount if you prefer it less tangy and flavorful. I sweeten this vinaigrette with honey, but white sugar or agave also works. I made a delicious mixed greens salad and buttery rolls for lunch, which I tossed with this simple lemon vinaigrette. My husband & I thought it was tasty and full of flavor and paired nicely with the rest of the meal.
