Tomato, Cucumber and White Bean Salad with Lemon Vinaigrette

This tomato, cucumber, and white bean salad with lemon vinaigrette recipe is my new favorite salad. I love that it’s super easy to throw together, uses pantry staple ingredients, and is very healthy. My husband was home for lunch recently, so I made this salad to pair with a bowl of soup and some crusty bread. We devoured the salad in minutes and both thought it was a delicious combination of flavors, colors, and textures.
