Tomato, Cucumber and White Bean Salad with Lemon Vinaigrette
This tomato, cucumber, and white bean salad with lemon vinaigrette is my new favorite salad. I love that it’s super easy to throw together, it uses pantry staple items and it’s very healthy. My husband was home for lunch recently so I made us this salad. We both loved the crunchy cucumbers and onions with the sweet tomatoes and the creamy white beans tossed together with mixed greens and a tangy lemon vinaigrette. We devoured the salad in minutes and both thought it was a delicious combination of flavors, colors, and textures.
How to Make Tomato, Cucumber, and White Bean Salad with Lemon Vinaigrette

Set the vinaigrette aside for 30 minutes to allow flavors to mingle.
Make the salad by placing the mixed greens, tomatoes, cucumber, white beans, and onion in a large bowl. Drizzle with some well-whisked lemon vinaigrette, to taste, then gently toss to coat evenly. Season with freshly cracked black pepper, to taste. Serve immediately. Enjoy.
Ingredients

- 4 cups mixed greens
- ½ cup grape tomatoes, halved
- ½ cucumber, peeled and sliced
- ½ cup white beans, rinsed and drained
- ¼ small red onion, sliced thinly **Soak onion slices in ice water for a few minutes if they are too strong in flavor. Dry on towel before adding to salad
- Freshly cracked black pepper, to taste
