Glazed Cinnamon Apple Cake

This glazed cinnamon apple cake is not only easy to throw together, but it also uses pantry ingredients that you probably already have on hand. I found the recipe on Sweetest Menu and kept it as written except for using sour cream instead of yogurt and I added more cinnamon. The cake smelled amazing while it baked and it was hard for my family to wait for it to cool before eating it. The glaze on top made this wonderful spicy cake taste even more special.

How to Make a Glazed Cinnamon Apple Cake

Preheat the oven to 350 degrees. Coat a 9-inch round cake tin with cooking spray.

Make the cake by combining the eggs, oil, sour cream, and vanilla in a small bowl; whisk until combined.

In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt together until well combined. Add the apples and mix until evenly coated.

Gradually add the wet ingredients to the dry ingredients until just combined. Pour batter into the prepared cake tin and spread out evenly with a rubber spatula. The batter will be very thick.

Make the cinnamon topping by combining the cooled melted butter with the sugar and cinnamon until well combined. Sprinkle evenly over the top of the cake.

Bake the cake for 30-35 minutes, making sure to turn halfway through baking, until a tester inserted in the center comes out clean. Transfer to a wire rack to cool.

Make the Glaze

Combine the powdered sugar and milk together until creamy, smooth, and your desired thickness.

Drizzle the glaze over the cooled cake.

Ingredients

Cinnamon Apple Cake:

  • ½ cup vegetable oil
  • ½ cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 cup red apple, peeled and diced *1 large or 2 small

Cinnamon Topping:

  • ¼ cup white sugar
  • 1 tbsp melted unsalted butter, cooled
  • 1 tsp cinnamon

Glaze:

  • ¼ cup powdered sugar
  • 2-3 tsp milk, to taste, depending on desired thickness
