Zucchini Carrot Muffins with Dried Cherries and Pecans
I wanted to make something special for my kids to celebrate the first day of school. I found this recipe over at Simply Scratch and thought it would be a terrific and healthy after-school snack. The house smelled amazing while these muffins baked and they turned out perfectly. My kids ate two muffins each as they told me about their day and they asked if they could have more muffins with their lunches tomorrow. I would say that makes these muffins a BIG hit with my kids – I love that!
How to Make Zucchini Carrot Muffins with Dried Cherries and Pecans
Preheat the oven to 350 degrees. Line a 12 cup muffin tin with liners. I only used 10 liners.
In a small bowl combine the flour, sugar, baking powder, salt, and cinnamon and mix until well combined. In a large bowl combine the grated zucchini, grated carrot, egg, melted butter, and vanilla.
Add the dry ingredients to the wet ingredients then mix until combined. Add the chopped pecans and dried cherries. Stir and divide evenly in the muffin tin (I only used 10 instead of all 12).
Place into the oven and bake for 20-23 minutes. Let cool. Enjoy.

Those muffins sound sooooo good! I would love that as a snack right now… although as a kid, I don’t think I would have touched them. I loved chocolate zucchini cake until my mom told me what it had in it – she just said it was chocolate cake originally!! lol Love that your kids aren’t picky eaters!
I love it when you can sneak vegetables into muffins and cookies. It makes me feel a little less guilty when I eat them!

I like using zucchini in muffins. The carrots and the dried cherries are a wonderful addition. I can just imagine how yummy these are.
They are healthy enough for my breakfast!
i often find myself slipping dried cherries into muffins, and this is a fine place for them! they add color, tartness, and chew, and that’s awesome.

you have a picture of vanilla but nothing about it in the ingredient list. How much? Also my mix is very dry with just one egg and 2 tb butter for liquid. Is that right?

Thanks for letting me know. I used 1 tsp of vanilla. The muffin mixture concerned me too but I went ahead as directed and my kids loved them.

DRY?? My mix is VERY wet. Should I have drained the grated zucchini before adding it? Help!! I don’t want to bake these if I should add more flour.
Most muffin batter is not dry. Go ahead and bake them, I bet they will be great
