Ham and Extra Sharp White Cheddar Omelette

My son has slowly become an egg fan. Lately, he likes them pretty much any way but especially over-easy, scrambled, and soft-boiled.. Recently, he asked for an omelette, so I made him this ham and extra-sharp white cheddar omelette recipe. He loved this breakfast and gobbled up every last bite, and said it paired nicely with some breakfast potatoes, fresh fruit, and twisted bacon.
Ham and Extra Sharp White Cheddar Omelette
Ingredients:
- 1 tbsp butter
- 2 eggs
- 1 tbsp milk, optional
- Sea salt and freshly cracked pepper, to taste
- 2-3 slices of Canadian bacon, diced
- Extra sharp white cheddar cheese, shredded, to taste
How to Make a Ham and Extra Sharp White Cheddar Omelette
Heat the butter in an ovenproof large skillet over medium-low heat and turn the broiler on in your oven.
Crack two eggs into a bowl, add the milk, and whisk until well blended; season with sea salt and freshly cracked pepper to taste.
Pour the egg mixture into the skillet and swirl so the pan is evenly coated with the egg.
Once your egg is starting to set, sprinkle the ham on one half, then top with the shredded cheese.
Move the skillet to the oven and place it on the top rack (don’t put the handle in the oven if it’s not oven-safe) and let the broiler cook the top part of the egg; it takes only 20-30 seconds or so.
Remove the pan and flip the other part of the egg mixture on top of the ham mixture.
Slide onto a plate and serve immediately. Enjoy.

That is one perfectly cooked omelet! I love omelets, but sometimes struggle to make them on the stove, as the underside can brown before the omelet is done. I love your method of starting it on the stove and finishing it under the broiler! I can’t wait to try this recipe. Thanks, Pam!
That’s one fancy breakfast! I offer scrambled eggs with a warmed roll, or a waffle. The broiler is too much for me in the morning.
