Chocolate Zucchini Muffins

Chocolate Zucchini Muffins

My generous neighbor Jack, who happens to have an amazing green thumb, gave me a couple of beautiful zucchinis from his garden. My kids asked if I would make chocolate zucchini bread but I decided to make chocolate zucchini muffins instead because I didn’t want to have my oven on for an hour in this hot weather. The muffins were a snap to make and tasted really fantastic! The kids loved that I threw in chocolate chips and I loved that I used whole wheat flour. These muffins were a great after-lunch snack and a perfect breakfast the following day.

  1. I would never think of putting zucchini in a chocolate muffin. That is just too cool. Of course I think I'd keep this a secret until after family raved about them! I don't see the sugar qty either.

  2. I made a batch of chocolate zucchini muffins last summer. My family loved them. It looks like yours turned out perfectly. I haven't made muffins in a while. I'll have to give your recipe a whirl this weekend!

  3. Wow, this is a daring attempt! I wouldn't have the guts adding zucchini to my chocolate cake – but they look great!

  4. Time to enjoy courgettes. Early courgettes are packed with flavour and a real treat.
    Time to harvest.
    Delicious muffins.
Wishing you a great weekend ♥

  5. Wow-these look fantastic! Adding zucchini to cakes and quick breads is a great way to add moisture (think applesauce or shredded carrots), and a great way to sneak veggies into your children's diet! Great job, Pam!

  6. That is a beautiful muffin. I once made chocolate zucchini cake and loved it, so I'm sure I would also love these. I like your addition of whole wheat flour. In scanning through the recipe I don't think I saw the amount of sugar to be used.

  7. Mmmm, zucchini and chocolate. Sounds like a great combo. I haven't used my muffin top pan in ages, I should rectify that soon. =) Have a great weekend!

  8. Just found your blog (through Mandy!) and everything looks so good! I'm going to be baking/cooking up a storm in the next few weeks thanks to you!

    These look divine!

  9. Beautiful looking muffin. Don't think I've seen a more perfect one. I always tell my kids that zucchinis are perfect because they take on the flavor of whatever they are cooked with. This has gotten them eating a lot of zucchini dishes over the years without complaint. I think I'll make these for Sunday breakfast. Thanks!

  10. Jaynie, Liz, and Happy@Home,

Thank you for letting me know. I have corrected the error in both the recipe and the printable recipe. I used 3/4 cup of white sugar. Thanks again.

    Cheers,

    Pam

  11. Delicious!!! I love anything chocolate and since they have veggies in them….I can eat as many as I want right? 🙂

  12. What an interesting flavor combination, I've never had anything like it! While zucchini are still looking good at my store, I should grab a couple and give this a try…

  13. I always prefer muffins over bread because the bake time is so much shorter!
Just made a chocolate zucchini cake for a family birthday. No one even knew it had zucchini. I called it chocolate ganache cake because really, the ganache on top is the best part. I also used whole wheat flour.
    The muffins look great!

  14. Thank you so much for this recipe! I planted zucchini this year and now that they are ripeing have no idea what to do with them! I will be giving this recipe a try! Thank again!!!

  16. Thanks for this recipe.

At my Toastmasters meeting the other night someone brought chocolate zucchini bread for snacks and it was big hit.

I didn't get the recipe from him so this is a great find for me.

    Thanks.

  17. I searched for a chocolate zucchini muffin today and am so glad I chose this recipe! They turned out amazing… my mother in law liked them, and she is a fabulous baker and quite picky 😉 Delish and super easy, thanks!

  18. Just made these and they are INCREDIBLE! So moist and chocolatey. Thanks so much for another great recipe. Good stuff here 🙂

  19. AMAZING! Made these this morning, and they are incredible! You can’t taste the zucchini, but it makes the muffins incredibly moist! I think next time I make them though, I might cut the amount of cocoa in half… just to see how they would taste a LITTLE less chocolatey!

  20. made these this morning. I think they are great, but the next time I make them, I think I am going to make sure that I grate the zucchini a bit finer – there was too much texture to them. thanks for the recipe!
