Strawberry and Mango Salsa with Cinnamon Chips

I made this strawberry and mango salsa with cinnamon chips recipe for my kids’ after-swimming snack, and they LOVED it! They literally ate every bite. My daughter, who was convinced she didn’t like mango, suddenly loved mango.
Strawberry and Mango Salsa with Cinnamon Chips
Salsa:
- 1 mango, peeled and diced finely
- 7 strawberries, diced finely
- Juice and zest from half a lime
- 2 tsp sugar (more if the fruit isn’t sweet)
- 2 tsp fresh parsley, chopped
Cinnamon Chips:
- 3 small flour tortillas
- 1 tbsp butter
- 2 tbsp sugar
- ¾ tsp cinnamon

How to Make Strawberry and Mango Salsa with Cinnamon Chips:
Preheat the oven to 400 degrees. Line a baking sheet with cooking spray.
Make the salsa by dicing the mango and strawberries, then place them in a bowl. Add the juice and zest from half of a lime, the sugar, and the parsley to the bowl. Mix to combine. Taste and add more sugar if needed. Chill in the refrigerator until needed.
Make the cinnamon chips by spreading a bit of butter over each tortilla.
Combine the sugar and cinnamon until well combined. Sprinkle the cinnamon sugar evenly over the buttered tortillas. Slice the tortillas into wedges using a pizza cutter or knife.
Cook the cinnamon chips by placing them on the baking sheet in a single layer.
Bake for 5-7 minutes, or until crisp and golden brown.
Serve the salsa with cinnamon chips. Enjoy!

This is a great snack. I had this at a party before and it was amazing. It was one of those dishes that I thought it would be ok and it was so flavorful and memorable – what a surprise! This crispiness of the cinnamon tortilla goes wonderfully with the fresh fruit. I had it with a different fruit combo, but I like this one with the mango and strawbs….
I threw some kiwi in and it was yummy! Definitely a good alternative to the cookies my 3 yr old was asking for 🙂
