Mini Oatmeal Raisin Cookies

My father in law’s very favorite cookies are oatmeal raisin and he just loves them. We are moving him to a new home this weekend so I wanted to bake him a little treat to make him smile through the stress of moving. I added some cinnamon, cardamom, and nutmeg for a nice kick of spice and I chopped the raisins up really well so they wouldn’t overpower the mini cookies. These cute and delicious mini oatmeal raisin cookies were taste tested by my daughter and she loved them so I’m sure her grandpa will too.
How to Make Mini Oatmeal Raisin Cookies
Preheat the oven to 350 degree. Line a baking sheet with parchment paper.
Whisk the oats, flour, baking soda, cinnamon, salt, nutmeg, and cardamom together in a small bowl until well combined.
In a separate large bowl, beat the butter with a hand mixer for 1 minute, until creamy and smooth.
Add the brown sugar and white sugar and beat for 2 minutes. Add the egg and vanilla and beat until creamy and smooth.
Gradually add the oat mixture to the butter mixture until just combined. Add the chopped raisins and stir to mix evenly.
Scoop about 1 tablespoon of dough and roll into a ball then place it on the prepared baking sheet spacing cookies 2 inches apart.
Bake for 8-9 minutes, turning halfway through baking time.
Remove from the oven and allow the cookies to cool for 10 minutes on baking sheets, then transfer them to a wire rack to cool completely. Store in an airtight container. Enjoy.
