Granola Cookies with Chocolate Chips & Coconut
This recipe was inspired by Cathy at Wives with Knives. When I saw granola cookies on her beautiful blog I knew I would be making them soon. I adapted the recipe to work with what I had on hand and they turned out terrific. I loved the crunch the granola gave to the cookies, the sweetness from the coconut, and the richness of the semi-sweet chocolate. These granola cookies with chocolate chips & coconut were a huge hit with the kids for their after-school snack and the guys that are here redoing our landscaping loved them too. I split one with a friend and we both thought they were FANTASTIC.
How to Make Granola Cookies with Chocolate Chips & Coconut
Preheat the oven to 375 degrees.
Combine the flour, baking soda, and salt together in a bowl. Set aside.
Beat together the sugars, vanilla, and butter with a mixer until creamy and smooth. Add the egg and mix until well combined. Slowly add the flour mixture to the sugar mixture until mixed. Add the granola, chocolate chips, and coconut and mix until just combined. Scoop spoonfuls of dough onto the baking sheet about 1 inch apart.
Place the baking sheet into the oven and bake for 11-13 minutes. Remove from the oven and let the cookies sit on the baking tray for 3 minutes before moving them to the baking rack to cool. Serve with ice-cold milk. Enjoy.

I have tried oatmeal chocolate chip cookies with the kids but not granola chocolate chip. These looks fun and I love that there is some coconut in there. I will give these a try, as my kids never complain when there is a new sweet in the house.
