I recently stumbled upon a delicious Thai-inspired Asian cucumber herb salad recipe on Gimme Some Oven that sounded wonderful. Thankfully, I had most of the ingredients on hand which made throwing dinner together on a busy weeknight super easy.  The salad was really flavorful and tangy and I especially loved the fresh cilantro and mint which made this cucumber salad extra special. This delicious salad paired nicely with a Thai basil chicken rice bowl.

How to Make an Asian Cucumber Herb Salad

Make the dressing by whisking together the lime juice, rice vinegar, oil, fish sauce, and minced garlic until well combined. Set aside until needed.

Asian Cucumber Herb Salad

Make the salad by tossing together the cucumber, red onion, green onion, cilantro, and mint; drizzle with the well-whisked dressing and toss to coat evenly. Top with black sesame seeds, toasted sesame seeds, and crushed red pepper flakes, to taste.

Serve immediately or cover and refrigerator for a couple of hours prior to serving. Enjoy.

Dressing:

  • tbsp fresh lime juice
  • 1 tbsp seasoned rice vinegar
  • 1 tbsp vegetable oil
  • 1-1½ tsp fish sauce, to taste
  • 1 small clove of garlic, minced

Cucumber Herb Salad:

  • 1 English cucumber, sliced thinly
  • ¼ small red onion, sliced thinly
  • 1 green onion, sliced thinly
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint leaves, chopped

For Serving:

  • Black sesame seeds
  • Toasted sesame seeds
  • Crushed red pepper flakes, to taste
  • Crushed peanuts, optional

    Wow, this was such an refreshing and lovely salad. I didn’t have fish sauce, so skipped it. But still it was simply devine with the crushed roasted peanuts.

  2. We enjoy cucumber sald but basically only make two versions – creamy and vinaigrette – so it will be nice to have another version to try.
