Blue Cheese, Pancetta, and Candied Walnut Salad

This blue cheese, pancetta, and candied walnut salad was tasty and decadent, and I love the combination of crunchy, salty, creamy & sweet. Although this isn’t a healthy salad, it’s great for a special treat and pairs nicely with a juicy steak, mashed potato casserole, and roasted asparagus.

Blue Cheese, Pancetta, and Candied Walnut Salad

Candied Walnuts:

  • 1 tbsp white sugar
  • ¼ cup walnuts

How to Make a Blue Cheese, Pancetta, and Candied Walnut Salad:

Prepare the candied walnuts by heating a DRY small skillet over medium heat. Add the sugar & let it melt. Once it’s turned into a clear liquid, add the walnuts & stir quickly. Remove from heat & place on a plate to cool. They will be stuck together, but once they cool, crush them apart.

Prepare the salad by combining the lettuce, tomatoes, blue cheese, pancetta, and pear in a large bowl.

Drizzle the top with some of the well-whisked balsamic vinaigrette, to taste, and toss to coat the salad evenly.

Serve immediately. Enjoy.

Ingredients

Candied Walnuts:

  • 5 cups of romaine lettuce chopped
  • Grape tomatoes halved (as many as you like)
  • 2 tbsp blue cheese
  • 4 slices of pancetta cooked & crumbled
  • ½ pear sliced thinly
  • 2 tbsp homemade balsamic vinaigrette Click here for the recipe

Instructions
