Chicken Salad Sandwich

Chicken Salad SandwichI wanted a quick and tasty sandwich for lunch. I had leftover chicken breast in the refrigerator, an apple, and some walnuts. I decided to throw them together and make a chicken salad sandwich. I decided to toast the bread because it was cold outside. The sandwich had a nice crunch from the walnuts, apples, and bread while the chicken was creamy and soft. It took only minutes to make and made a tasty and satisfying lunch.

Chicken Salad Sandwich with Walnuts and Apple:

Ingredients:

  • 2 slices of bread (I used Tuscan bread from Trader Joe’s)
  • 1/2 cup of shredded roasted chicken breast
  • 1-2 tbsp walnuts, chopped
  • 1/4 apple, diced
  • 1 tbsp mayonnaise
  • Sea salt and freshly ground pepper, to taste

  1. I am always reluctant when it comes to pairing fruit with meat , you sandwich is making me change my mind 🙂

  2. Jamie loves chicken salad, so I make it often for him, but switch it up. His favorite is red grapes and toasted almonds. Yours looks great! Walnuts and apples are great in tuna, too.
We are hooked on TJ's Tuscan bread makes the BEST toast. I have some over on my counter right now. I like it with peanut butter. 🙂

  3. Yum, I love a good hearty sandwich, especially when it has apples and walnuts in it. What a great combination of flavors, Pam.
